You might need a new cable, sometimes heat destroys the inner lining of the cable which allows it to slide easily. Does the pedal feel normal when the car is cold? Does the pedal get heavier as you drive the car? P.S. adjustable cables are GARBAGE.

Assuming that everything was fine before with this same setup, your problem sounds fuel related. Check your fuel pressure. Check your fuel filter. Maybe your fuel pump is dying. Does it do it in all gears?
