I had a permit, but technically i wasn`t allowed to ride in new york with it, as far as I know. For 2 months.
I had over the ankle boots, gloves, jacket with all the pads helmet obviously and long thick socks

when you lay on the tank to accelerate on a straight line you should look through it.
i never wear think long socks, i know that i should wear something over my ankle but i can't stand boots, so i just wear a light sneakers that won't fall off easily. helmet, gloves, jacket, and jeans are on me all the time.
btw you still didn't say how long you were riding it with no license lol
I rode for over a month on my permit, so by the time i got my license i was very comfortable on it and already had experience riding on highway, public roads, and at a high speed in general.

Almost 3 months with the permit.
I don`t wear boots on local riding either, but 100 miles is a pretty long ride, and my main reason for wearing them is protection from wind.. i don`t want effed up joints when i`m 35 lol.
On my bike you can`t lean that much, it`s a more comfortable sports bike, back is more straight. Besides, it`s a 250cc, not much accelerating there lmao.
